Cranberry Walnut Squares

Ingredients For: Cranberry Walnut Squares
Cookie Crust (see below)
4 eggs
1 C Karo, light or dark syrup
1 C sugar
3 Tbsp butter, melted
2 C coarsely chopped fresh or frozen cranberries
1 C chopped walnuts
1 Tbsp orange zest
Instructions For: Cranberry Walnut Squares
Prepare and bake cookie crust for cranberry walnut squares. Meanwhile, in a large bowl, beat eggs, corn syrup, sugar and butter until well blended. Chop cranberries, oranges and orange zest in food processor. Add walnuts to chop as well. Stir in cranberry mixture into other ingredients. Immediately pour over hot crust; spread evenly. Bake 25-30 mins or until set. Cool completely. Cut into 1½ inch squares. Makes about 60 squares.
Cookie Crust For Cranberry Walnut Squares:
Preheat oven to 350 degrees. Spray 15x10x1 inch baking pan with cooking spray. In large bowl with mixer at medium speed, beat 2 ½ C flour, 1 C cold butter, ½ C sugar and ½ teas salt until mixture resembles fine crumbs; press firmly into prepared pan. Bake 20-23 mins., or until golden brown. Top with filling; finish baking as directed above. Cranberry Walnut Squares Makes about 60 squares.
