Butter Pecan Drop Cookies
Ingredients For: Butter Pecan Drop Cookies
2 sticks (1 cup) salted butter, softened
1 cup packed brown sugar
1 large egg yolk, separated
1-teaspoon vanilla extract
2 cups self-rising flour
Toasted Pecans:
1 tablespoon salted butter 1 3/4 cup chopped pecans
Instructions For: Butter Pecan Drop Cookies
In small baking pan or pie tin, place chopped pecans and 1 tablespoon of butter.
Bake at 325 degrees F. for 5-7 minutes or until toasted and browned.
In a large bowl, cream together 2 sticks butter and brown sugar with an electric mixer set on medium speed.
Beat in egg yolk and vanilla extract.
Gradually add flour.
Cover and refrigerate for 1 hour.
Preheat oven for butter pecan drop cookies to 375 degrees F.
Roll into 1-inch balls, roll balls in toasted pecans. Place on un-greased cookie sheet 2 inches apart.
Bake for 10-12 minutes or until golden brown.
