Tropical Drops Cookie
Ingredients For: Tropical Drops Cookie
1-cup brown sugar packed
1/2-cup butter or margarine, softened
1 egg
1-teaspoon vanilla extract
2/3-cup raisins
2/3-cup walnuts chopped
1 8-ounce can crushed pineapple well drained (1/2 cup)
1/3-cup coconut flaked
1/3 cup red maraschino cherries chopped, well drained
2 cups flour
1 teaspoon baking powder
1/2-teaspoon baking soda
1/2-teaspoon salt
About 42 maraschino cherry halves, well drained
Instructions For: Tropical Drops Cookie
Preheat oven to 375°. Grease baking sheets.
In a large bowl, mix brown sugar, butter, egg and vanilla until fluffy. Stir in raisins, walnuts, pineapple, coconut and chopped cherries. Stir in flour, baking powder, and baking soda and salt until well blended. Drop by teaspoonfuls 2 inches apart on baking sheets. Top each tropical drops cookie with a cherry half.
Bake tropical drops for 10 to 12 minutes or until golden brown. Cool cookies on wire racks.
Store tropical drops cookie loosely covered.
