Orange Date Nut Cookies
Ingredients For: Orange Date Nut Cookies
1/2-cup butter, softened
1-cup sugar
2 eggs
2 Tablespoons grated orange peel
1/2-teaspoon vanilla
1 cup unbleached, all-purpose flour
1/2 teaspoon baking powder
Pinch of salt
2 cups chopped dates
2 cups chopped walnuts
For the Lemon Glaze:
2 Tablespoons freshly squeezed lemon juice
1-1/4 cup sifted confectioner's sugar
Instructions For: Orange Date Nut Cookies
Cream the butter and sugar together.
Beat in eggs, orange peel and vanilla. Beat in flour, baking powder, and pinch of salt until blended. Do not over beat.
Stir in chopped dates and chopped walnuts. Batter will be very thick.
Spoon batter into a heavily buttered 9x13-inch pan and spread evenly. Bake 25-30 minutes or until top is golden brown. Allow to cool.
Glaze, mix the lemon juice and confectioner's sugar together so that it is of spreading consistency.
Spread glaze on cooled Orange Date Nut Cookies.
