2 cups packed brown sugar
½ cup (1 stick) butter
2 eggs
1-teaspoon baking soda
1-tablespoon water
3 cups flour
Pinch of salt
1-teaspoon cream of tartar
¾ cup coconut
1-teaspoon vanilla extract
Instructions For: Caramel Cookie Recipes
Preheat oven to 325 degrees.
In a bowl, cream brown sugar and butter. Add eggs, mixing well after each addition. Dissolve baking soda with water and add to creamed mixture.
Sift together flour, salt and cream of tartar and add to creamed mixture. Add coconut and vanilla extract.
On a sheet of wax paper form the dough into two (12-inch) rolls. Wrap; refrigerate overnight.
Next day, remove one roll at a time from refrigerator and cut into slices ¼ inch or thinner. Set on un-greased cookie sheets. Bake caramel cookie recipes in preheated oven 6 to 7 minutes or until cookies just start to brown around the
edges. Cookies burn easily. When done, remove from oven and let sit on cookie sheets until slightly cooled. Remove from sheets to wire racks. Caramel cookie recipes makes about 3 Dz. cookies.
