Tea Cookie Recipes
Ingredients For: Tea Cookie Recipes
1 3/4 cups flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2-cup butter or margarine at room temperature
1 cup granulated sugar
1 large egg
1 Tbs. lemon juice
1 1/2 tsp. vanilla
2 cups (6 oz.) flaked coconut
3/ 4 cup (3 oz.) finely chopped toasted nuts, like macadamias or pecans
Instructions For: Tea Cookie Recipes
Mix flour, salt and baking soda, set aside. Beat butter and sugar in a large bowl with electric mixer until light and fluffy. Beat in egg, lemon juice and vanilla. Gradually beat in flour mixture until well blended. Stir in coconut.
Divide dough in half. Shape each half into a 1 and 1/2-inch diameter log. (Chill about 30 minutes). Roll each in nuts. Wrap and freeze until firm enough to slice.
Heat oven to 375 degrees. Lightly grease cookie sheets. Cut dough into 1/4 inch thick slices and place 1 1/2 inches apart on greased cookie sheets. Bake tea cookie recipes 9 to 12 minutes or until lightly browned. Cool on sheets 1 to 2 minutes; remove to racks. Tea cookie recipes makes about 3 Dz. cookies.
